Table of Contents
Bissy is a grated to refined form of kola nut. It possesses antimicrobial, antioxidant, and antiviral properties.
Origin
Kola nuts have been grown in and freshly harvested (September to December) in humid West African tropical regions such as Gambia, Liberia, Nigeria, and Sierra Leone for centuries. When used in those native regions it is chewed for its antidotal properties as it is a stimulant. As time went on it was dried and exported to parts of America, Europe, and the West Indies.
Kola nuts are similar in size to that of a chestnut. The kola nuts tree, a plant species of Malvaceae family, grows in tropical humid forests reaching a height of sixty feet. It sprouts star-shaped fruits that bear the kola nuts which are encompassed by an edible white shell. The kola nut can vary in color (brown, gray, green, or pinkish-red) and taste (bitter, and/or sweet) which is dependent on the species of tree.
It was introduced into the West Indies such as Jamaica, in the late 16th century through the slave trade. Kola nuts planted and cultivated species, cola acuminata (bitter kola/ small kola) and cola nitida (big kola) are commonly found in Jamaica. The kola nuts are picked and placed in the sun for up to twenty-four hours to dry. Once dried it is then grated into what resembles clay-like flakes. It can be refined by place into a spice/coffee grinder which will produce a powder form. Add bissy powder to boiling water spice up with milk and your preferred sweetener.
