Honey Bourbon Papaya Jam

Honey elevates the taste of the papaya with notes of bourbon. Edible black seeds bring a textured crunch along with slight peppery flavor to this jam.

Ingredients
  

  • 2 ½ c. (1 whole/ 737 g) papaya, medium diced
  • c. granulated white sugar
  • 50 ml. Kentucky straight bourbon whiskey liquor (1 shooter bottle; brand Rebel 100)
  • ¼ c. honey
  • 3 Tbsp fresh lemon juice

Method
 

  1. Peel and dice papaya. Add papaya along with seeds to food processor and puree for 30 seconds.
  2. Add papaya puree and sugar in a medium pot, then place on medium heat. Cook for about 15 minutes occasionally stirring so as not to stick to the bottom of pot.
  3. Add bourbon liquor cook for 5 minutes stirring occasionally.
  4. Then add honey and lemon juice, stir in thoroughly. Cook for another 5 minutes
  5. Turn heat off and place warm jam in sterilized jar.
