Peel and dice papaya. Add papaya along with seeds to food processor and puree for 30 seconds.
Add papaya puree and sugar in a medium pot, then place on medium heat. Cook for about 15 minutes occasionally stirring so as not to stick to the bottom of pot.
Add bourbon liquor cook for 5 minutes stirring occasionally.
Then add honey and lemon juice, stir in thoroughly. Cook for another 5 minutes
Turn heat off and place warm jam in sterilized jar.
