Ingredients
  

  • 4 oz dried Jamaican sorrel (dried hibiscus petals)
  • 1 gallon boiling water
  • 20 gram (12 slices) ginger root (washed & sliced)
  • 12 whole cloves
  • 2 sticks cinnamon
  • 1 cup dark brown sugar
  • cup Jamaican overproof white rum (optional)

Method
 

  1. In a large pot, pour water in, then bring it to a boil.
  2. Add the dried sorrel, fresh ginger, whole cloves, and cinnamon sticks into the pot. Allow to boil for 10 minutes.
  3. Allow to steep (sit in covered pot for 4 hours) on the stove top. Flavors and color will intensify the longer it sits.
  4. Strain sorrel liquid into a clean container. Pressing on the wet mixture in the strainer to release any extra juices.
  5. Add sugar to the sorrel and stir until it dissolves.
