Ingredients
  

  • 10-12 Fresh peppermint leaves (about half a handful)
  • 1 stalk Fresh dried lemongrass (dried and cut into pieces)
  • 2 cups water
  • Honey or sugar, for sweetening to taste (Optional)

Method
 

  1. Prepare herbs by rinsing the fresh peppermint leaves and dried lemongrass stalks to remove any dirt or debris.
  2. In a medium saucepan, bring 2 cups of water to a boil.
  3. Once the water is boiling, add the fresh peppermint leaves and dried lemongrass. Reduce the heat and let the mixture simmer for about 10 minutes, allowing flavors to infuse.
  4. Remove the saucepan from the heat and strain the tea directly into a teacup or teapot, discarding the herbs.
  5. Taste first before adding your chosen sweetener, such as honey or brown sugar. Serve hot or let cool for a refreshing iced tea.
